unfortunately the earlier famous bookstores are all closed; but I always got some books in the shop of the Musée de l'Armée. You may also try one of the larger stores of FNAC.
I'll be in july in Paris with a french guy and will probably meet Yves Martin, he will surely know stores (if they exist). I'll give a note here if there are any.
